From Alabama, USA:

Can you please tell me the guidelines that school lunchrooms must follow in order to meet our son's diabetic needs?

It would be better for you to get this information from your local diabetes team so that it is consistent. The advice will be dependent upon local views on carbohydrate portion management. The main thing is that whoever is supervising your son at school should know that he should have some starchy carbohydrate (rice, pasta, bread, potato) at lunchtime. The detail will depend upon whether you supply him with lunch or he picks something up at school. You will find more detailed general advice here at the pages of Children with Diabetes, and at the Childrens' Diabetes Service in Glasgow
