I need the nutrient content of Vietnamese foods for a patient of mine who is a pregnant Vietnamese woman with Gestational Diabetes.
There are two excellent resources through the Diabetes Practice Group of the American Dietetic Association. One was published in 1992 and entitled Hmong American Food Practices, Customs, and Holidays. The other is Chinese American Food Practices, Customs, and Holidays and it just came out (published 1998). As far as how to get a copy of there, you could either call the ADA or the chair of the Ethnic Food Series Group of the Diabetes Care and Education Practice Group.
